A hearty and delicious winter vegetable quiche featuring sautéed kale, butternut squash, mushrooms, and onions baked in a flaky pie crust with a creamy egg and cheese filling. Perfect for a comforting brunch or light dinner during the colder months.

Ingredients

Scale

Crust

  • 1 pre-made pie crust

Vegetables

  • 1 cup chopped kale
  • 1 cup diced butternut squash
  • 1 cup sliced mushrooms
  • 1/2 cup diced onion

Filling

  • 4 large eggs
  • 1 cup milk
  • 1 cup shredded cheese (cheddar or your choice)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven. Set your oven to 375°F (190°C) to ensure it reaches the ideal temperature for baking your quiche.
  2. Sauté the vegetables. Heat a skillet over medium heat and cook the diced onion, mushrooms, and butternut squash until they are tender, stirring occasionally to prevent sticking or burning.
  3. Add the kale. Toss the chopped kale into the skillet and cook until it wilts, which should take just a few minutes.
  4. Prepare the egg mixture. In a mixing bowl, whisk together the eggs, milk, salt, and pepper until smooth and well combined.
  5. Assemble the quiche. Spread the sautéed vegetables evenly over the bottom of the pre-made pie crust to create a balanced layer.
  6. Add the egg mixture and cheese. Pour the whisked egg mixture over the vegetables and sprinkle the shredded cheese on top to melt during baking.
  7. Bake the quiche. Place the assembled quiche in the preheated oven and bake for 35-40 minutes, or until the filling is set in the center and the top is golden brown.
  8. Cool and serve. Remove the quiche from the oven and let it cool for a few minutes to allow it to firm up, then slice and enjoy.

Notes

  • You can substitute milk with half-and-half or cream for a richer filling.
  • Use any cheese you prefer, such as Swiss, Gruyère, or mozzarella.
  • For a gluten-free option, use a gluten-free pie crust.
  • Ensure vegetables are cooked tender to avoid soggy quiche.
  • Letting the quiche cool slightly before slicing helps maintain clean slices.
