Instructions

  1. Sauté Aromatics: In a large pot or saucepan, heat the olive oil over medium-high heat. Add the chopped onions and cook until translucent, about 5 minutes. Then add the minced garlic, chopped carrots, celery, dried thyme, oregano, salt, and black pepper. Cook for an additional 2 to 3 minutes to soften the vegetables and develop flavors.
  2. Simmer Soup: Pour in the low sodium vegetable broth and add the drained and rinsed white beans. Bring the mixture to a boil, then reduce the heat to low and let it simmer gently for 15 minutes. This allows the flavors to meld together beautifully.
  3. Add Spinach: Stir in the baby spinach and continue to simmer for about 2 minutes, just until the spinach wilts and becomes tender.
