Instructions

  1. Prepare the filling: In a large bowl, combine shredded chicken, softened cream cheese, diced sausage (if using), green onions, shredded cheddar cheese, hot sauce, and Cajun seasoning. Mix well until evenly incorporated, adjusting the hot sauce quantity based on your preferred spice level.
  2. Assemble the egg rolls: Place an egg roll wrapper on a clean surface with one corner facing you, forming a diamond shape. Spoon about 2 tablespoons of the filling near the bottom corner. Fold the bottom corner over the filling, then tuck in the two side corners tightly. Roll the wrapper firmly towards the top corner and seal the edge with the beaten egg to secure the roll.
  3. Heat the oil: In a deep skillet or fryer, heat approximately 2 inches of vegetable oil to 350°F (175°C). Use a thermometer for accuracy to ensure proper frying temperature.
