  • ½ teaspoon seasoning salt (or to taste)

Instructions

  1. Preheat oven and prepare pan: Preheat your oven to 400°F (204°C) and line a large rimmed baking pan with parchment paper to prevent sticking and for easy cleanup.
  2. Spread parmesan cheese: Grate 8 ounces of parmesan cheese and evenly spread it in a thin layer over the prepared parchment paper on the baking pan.
  3. Slice onions: Slice 3 medium yellow onions very thinly, about 1/6 inch thick, preferably using a mandolin slicer for uniformity. Lay the onion slices in a single layer over the parmesan cheese on the pan.
  4. Coat onions with oil: Brush the onion slices evenly with 2 tablespoons of avocado oil to help them crisp up during baking.
  5. Season the onions: Sprinkle the top of the onion slices with 2 teaspoons paprika, 1 teaspoon coarse sea salt, 1 teaspoon garlic powder, ½ teaspoon seasoning salt, and ¼ teaspoon ground black pepper, adjusting seasoning to taste.
  6. Bake onions: Place the baking pan in the preheated oven and bake for 25 to 30 minutes, or until the onions are golden brown and crispy.
  7. Cool and serve: Remove from the oven and let the onion chips cool on the pan for about 10 minutes. Once cooled, break them into chips and enjoy your crispy, cheesy onion ring chips.
