Chickpea Filling

  • 2 cans chickpeas (drained and rinsed)
  • ¼ cup vegan mayo
  • ¼ cup Franks Red Hot Sauce
  • ½ cup diced celery
  • ¼ cup diced onion
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ⅛ teaspoon salt
  • ¼ teaspoon pepper
  • ½ lemon (squeezed)

  • 4 handfuls baby spinach

Instructions

  1. Mash Chickpeas: In a large mixing bowl, add the drained and rinsed chickpeas and mash them using a potato masher or fork until you reach your desired consistency, whether chunky or smooth.
  2. Prepare Filling: Add vegan mayo, Franks Red Hot Sauce, diced celery, diced onion, garlic powder, onion powder, salt, pepper, and freshly squeezed lemon juice to the mashed chickpeas. Mix thoroughly until everything is well combined.
  3. Assemble Wraps: Lay a lavash wrap flat on a clean surface and spread an even layer of the chickpea mixture across it, leaving about a half-inch border on the sides. Next, add a thin layer of baby spinach on top of the chickpea spread. Carefully roll the wrap into a tight log shape. Repeat this process for all lavash wraps.
  4. Slice Pinwheels: Place the rolled wraps seam-side down. Secure them by sliding toothpicks into the logs approximately every 1.5 inches to prevent unrolling. Using a sharp large knife, slice each rolled wrap into pinwheel spirals about 1.5 inches thick.
  5. Serve: Arrange the vegan pinwheels on a platter and serve immediately for a fresh, flavorful snack or appetizer. Enjoy!
