Ingredients

Scale

For the Short Ribs

  • 2 lbs short ribs
  • Salt and pepper, to taste
  • Broth (beef or vegetable), enough to cover for slow cooking

For the Smoked Gouda Cream Sauce

  • 1/4 cup butter
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 2 cups shredded smoked gouda cheese
  • Salt and pepper, to taste

For the Pizza

  • 1 lb pizza dough
  • Fresh basil or parsley, 1/4 cup for garnish

Instructions

  1. Prepare the Short Ribs: Season the short ribs generously with salt and pepper. Heat a skillet over high heat and sear the short ribs until browned on all sides. Transfer the browned ribs to a slow cooker, add broth until the ribs are mostly submerged, and cook on low for 6 to 8 hours until the meat is very tender. Shred the meat using forks and set aside.
  2. Make the Smoked Gouda Cream Sauce: In a saucepan, melt butter over medium heat. Add the finely chopped onions and minced garlic, cooking until translucent and fragrant. Slowly stir in the heavy cream and shredded smoked gouda cheese, continuing to stir until the cheese melts completely and forms a smooth, creamy sauce. Season with salt and pepper to taste.
  3. Prepare the Pizza Dough: Lightly flour your work surface and roll out the pizza dough to your preferred thickness. Transfer the dough carefully onto a pizza stone or a baking sheet lined with parchment paper.
  4. Assemble the Pizza: Evenly spread the smoked gouda cream sauce over the rolled-out pizza dough. Distribute the shredded short ribs over the sauce layer. Add any additional toppings if desired.
  5. Bake the Pizza: Preheat your oven to 475°F (245°C). Place the assembled pizza in the oven and bake for 12 to 15 minutes, or until the crust turns golden and crispy. Remove from the oven and allow to cool for a few minutes. Garnish with fresh basil or parsley before serving.

Notes

  • For extra flavor, marinade short ribs overnight before searing and slow cooking.
  • You can substitute smoked gouda with another smoky cheese like smoked mozzarella if preferred.
  • If you do not have a slow cooker, short ribs can be braised in the oven at 300°F for 3-4 hours until tender.
  • Let the pizza rest a few minutes after baking for easier slicing and better flavor melding.
  • Additional toppings like caramelized onions or roasted peppers can complement the richness of the short ribs and cheese sauce.
