  • 1/2 cup grated English cucumber, excess moisture squeezed out

  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper

Salad

  • 4 cups cooked chicken, chopped or shredded
  • 1 cup diced cucumber
  • 1/2 cup diced celery
  • 1/2 cup diced red onion
  • 1/2 cup crumbled feta cheese

Instructions

  1. Make the Tzatziki dressing: In a medium bowl, combine the Greek yogurt, grated cucumber, lemon juice, grated garlic, chopped dill, chopped parsley, sea salt, and freshly ground black pepper. Stir well until all ingredients are fully incorporated, creating a creamy and flavorful tzatziki sauce.
  2. Add the salad ingredients: To the bowl with the tzatziki mixture, add the cooked, chopped chicken, diced cucumber, diced celery, diced red onion, and crumbled feta cheese. Stir gently but thoroughly until everything is evenly mixed and coated with the dressing.
  3. Adjust seasoning and serve: Taste the salad and adjust the lemon juice, salt, or pepper if needed to suit your preference. Serve the salad chilled over fresh greens, with pita chips, in pita pockets, lettuce cups, or as a filling for sandwiches or wraps.
