Ingredients

Scale

For the Tzatziki Sauce

  • 1 cup plain Greek yogurt
  • 1/2 cup grated English cucumber (excess moisture squeezed out)
  • 3 tablespoons fresh lemon juice
  • 2 garlic cloves, peeled and grated
  • 2 tablespoons chopped fresh dill
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper

For the Salad

  • 4 cups cooked chicken, chopped or shredded
  • 1 cup diced cucumber
  • 1/2 cup diced celery
  • 1/2 cup diced red onion
  • 1/2 cup crumbled feta cheese

Instructions

  1. Prepare the Tzatziki Sauce: In a medium bowl, combine the Greek yogurt, grated cucumber, fresh lemon juice, grated garlic, chopped dill, chopped parsley, sea salt, and freshly ground black pepper. Stir everything until well blended to create a creamy and flavorful tzatziki sauce.
  2. Combine the Salad Ingredients: Add the cooked chicken, diced cucumber, diced celery, diced red onion, and crumbled feta cheese to the bowl with the tzatziki sauce. Gently stir the mixture until all ingredients are evenly coated with the sauce and well mixed. Taste the salad and adjust seasoning by adding more lemon juice, salt, or pepper as desired.
  3. Serve: Serve the tzatziki chicken salad chilled or at room temperature. You can enjoy it over fresh greens, with pita chips, stuffed inside a pita pocket, served in lettuce cups, or used as a filling for sandwiches and wraps. For extra flavor and texture, optionally top with chopped tomatoes, kalamata olives, additional feta cheese, and fresh herbs.

Notes

  • Squeeze out excess moisture from the grated cucumber to prevent the salad from becoming watery.
  • This salad can be made ahead and stored in the refrigerator for up to 2 days for best freshness.
  • Use rotisserie or leftover cooked chicken for convenience.
  • Adjust the amount of garlic and lemon juice to your taste preference.
  • For a lighter version, use low-fat Greek yogurt.
