Ingredients

Scale

Chicken

  • 2 small chicken breasts, cut into ½ inch pieces
  • 1 tablespoon olive oil
  • 1 tablespoon poultry seasoning (or salt, pepper, garlic powder mix)

Bread & Garlic Butter

  • 1 Italian style loaf, sliced lengthwise in half
  • 1 stick (8 tablespoons) unsalted butter, melted
  • 1 tablespoon minced garlic
  • 1 tablespoon chopped parsley
  • 1 teaspoon crushed red pepper flakes

Alfredo Sauce

  • ½ stick (4 tablespoons) unsalted butter
  • 1 tablespoon minced garlic
  • ½ cup heavy cream
  • ¼ cup shredded parmesan cheese
  • 1 tablespoon chopped parsley

Toppings

  • ½ cup shredded mozzarella cheese

Instructions

  1. Prepare the Chicken: Cut the chicken breasts into ½ inch pieces. In a bowl, drizzle with 1 tablespoon of olive oil and season with 1 tablespoon of poultry seasoning or a mix of salt, pepper, and garlic powder. In a pan over medium heat, cook the chicken pieces until golden and cooked through.
  2. Prepare the Bread and Garlic Butter: Slice your Italian loaf lengthwise in half. In a small bowl, mix together 1 stick of melted butter, 1 tablespoon minced garlic, 1 tablespoon chopped parsley, and 1 teaspoon crushed red pepper flakes. Spread this butter mixture evenly on both halves of the bread.
  3. Toast the Bread: Preheat the oven to 350°F (175°C). Place the bread halves buttered side up on a baking sheet and toast in the oven for 5-10 minutes. Check after 5 minutes and continue baking until the bread reaches your desired level of toasting.
  4. Make the Alfredo Sauce: Using the same pan you cooked the chicken in, heat over medium-low heat. Add ½ stick of butter and let it melt. Stir in 1 tablespoon minced garlic and cook for 2-3 minutes until fragrant. Lower the heat to low and add ½ cup heavy cream, ¼ cup shredded parmesan cheese, and 1 tablespoon chopped parsley. Simmer on low heat, stirring continuously, until the sauce thickens slightly, about 3-5 minutes. Remove from heat.
  5. Assemble the Garlic Bread: Spread half of the Alfredo sauce over the toasted bread halves. Top evenly with the cooked chicken pieces, then sprinkle ½ cup shredded mozzarella cheese on top. Spread the remaining Alfredo sauce over the cheese and chicken.
  6. Bake the Assembled Bread: Return the assembled bread to the 350°F oven and bake for another 5 minutes, or until the cheese is fully melted and bubbly.
  7. Serve: Remove from oven and slice into 2-3 inch pieces. Serve warm and enjoy this comforting, cheesy chicken Alfredo garlic bread.

Notes

  • You can substitute poultry seasoning with a simple mix of salt, pepper, and garlic powder if preferred.
  • For extra heat, add more crushed red pepper flakes or a dash of hot sauce to the butter mixture.
  • This dish is best served immediately to enjoy the melted cheese and fresh garlic flavors.
  • Leftovers can be stored in the refrigerator and reheated in the oven to maintain crispiness.
  • For a lighter version, use half-and-half instead of heavy cream, but the sauce will be less rich.
