4.6 from 127 reviews

A delightful fall-inspired sandwich combining the spicy sharpness of melted cheddar with sweet honeycrisp apple slices, tangy pickled jalapeños, and crunchy kettle chips on toasted sourdough bread. Perfect for a quick and flavorful lunch that balances spicy, sweet, and savory notes.

Ingredients

Scale

Bread & Cheese

  • 2 slices sourdough bread (or your favorite bread)
  • 12 ounces sliced sharp cheddar cheese

Condiments & Toppings

  • 1 tablespoon grainy Dijon mustard
  • 12 teaspoons honey
  • 10 slices pickled jalapeños
  • 56 thin slices red onion
  • ¼ honeycrisp apple, thinly sliced
  • ½ cup kettle potato chips
  • ¼ cup arugula

Instructions

  1. Toast the Bread: Place both slices of sourdough bread on a small baking sheet and broil on high in the oven for 1-2 minutes, or until lightly browned. Watch carefully to avoid burning.
  2. Melt the Cheese: Remove the baking sheet from the oven and flip each slice of bread. Cover only one slice with the sliced sharp cheddar cheese, then return the pan to the broiler for another 1-2 minutes until the cheese melts and bubbles.
  3. Add Pickled Jalapeños and Spread Condiments: Take the pan out of the oven, top the melted cheese slice with pickled jalapeño slices. On the plain slice of bread, spread grainy Dijon mustard evenly, then drizzle with honey for a sweet contrast.
  4. Assemble the Vegetables and Chips: Layer the honeycrisp apple slices, red onion slices, arugula, and kettle potato chips on top of the honey and mustard spread slice to build texture and flavor.
  5. Close and Serve: Carefully close the sandwich by placing the cheesy jalapeño slice on top of the chip and vegetable slice. Gently press down to crush the chips and meld the flavors together. Slice in half and enjoy immediately.

Notes

  • Keep a close eye on the bread while broiling to prevent burning as broilers can vary significantly in heat.
  • Adjust the number of pickled jalapeño slices depending on your preferred spice level.
  • Using honeycrisp apples offers a crisp and sweet element; other tart apple varieties may also work but will change the flavor profile.
  • The kettle chips add a satisfying crunch that complements the softness of the melted cheese and bread.
  • This sandwich is best enjoyed fresh to preserve the crunch of the chips.
