Chicken
- 2 lb (900g) chicken breasts
- Sea salt, to taste
- Ground pepper, to taste
- 1 1/2 tbsp olive oil
Sauce
- 1–2 cloves minced garlic
- 1 oz (28g) sun-dried tomatoes
- 1 1/4 cup (300ml) chicken broth
- 8 oz (226g) cream cheese
- 15 oz (425g) canned artichokes, drained and chopped
- 1/4 cup (15g) chopped parsley
- Prepare and Sear the Chicken: Season the chicken breasts generously with sea salt and ground pepper. Heat olive oil in a large skillet over medium-high heat. Once the oil is hot, add the chicken breasts and sear each side for 5 to 6 minutes, or until golden brown and cooked through. Remove from skillet and set aside on a plate.
- Sauté Garlic and Sun-Dried Tomatoes: Reduce heat to medium-low. Add minced garlic and sun-dried tomatoes to the skillet. Sauté for about 1 minute until the garlic becomes fragrant.
- Create the Creamy Sauce: Pour chicken broth into the skillet and simmer for 5 minutes, stirring occasionally. Stir in cream cheese and whisk until melted, creating a smooth and creamy sauce. Add chopped artichokes, season with additional salt and pepper if necessary, then stir in chopped parsley.
- Combine Chicken and Sauce: Return the seared chicken breasts to the skillet. Spoon the creamy sauce over the chicken, coating it well. Continue cooking for 2 to 3 minutes until the chicken is heated through and the flavors meld together.
- Final Touch and Serve: Remove skillet from heat. Sprinkle extra chopped parsley over the top for garnish. Serve hot and enjoy this flavorful, creamy chicken dish.
