  • 1 1/4 cup (300ml) chicken broth
  • 8 oz (226g) cream cheese
  • 15 oz (425g) canned artichokes, drained and chopped
  • 1/4 cup (15g) chopped parsley

Instructions

  1. Prepare and Sear the Chicken: Season the chicken breasts generously with sea salt and ground pepper. Heat olive oil in a large skillet over medium-high heat. Once the oil is hot, add the chicken breasts and sear each side for 5 to 6 minutes, or until golden brown and cooked through. Remove from skillet and set aside on a plate.
  2. Sauté Garlic and Sun-Dried Tomatoes: Reduce heat to medium-low. Add minced garlic and sun-dried tomatoes to the skillet. Sauté for about 1 minute until the garlic becomes fragrant.
  3. Create the Creamy Sauce: Pour chicken broth into the skillet and simmer for 5 minutes, stirring occasionally. Stir in cream cheese and whisk until melted, creating a smooth and creamy sauce. Add chopped artichokes, season with additional salt and pepper if necessary, then stir in chopped parsley.
