Instructions

  1. Prepare the Chicken: If not using leftover cooked chicken, boil, bake, or grill chicken breasts until fully cooked through. Allow them to cool slightly, then shred or dice into bite-sized pieces.
  2. Toss Chicken with Sweet Chili Sauce: In a mixing bowl, combine the cooked chicken with the sweet chili sauce, ensuring each piece is evenly coated to infuse the spicy-sweet flavor throughout.
  3. Prepare the Veggies: Wash and shred the lettuce or mixed greens. Slice the cucumber thinly, shred the carrots, and slice the red onion into thin strips. Slice the avocado just before assembling to prevent browning.
  4. Assemble the Wraps: Lay each tortilla flat and spread a thin layer of mayonnaise or Greek yogurt in the center if using. Add a layer of greens followed by the sweet chili chicken.
