Ingredients

Scale

Main Ingredients

  • 34 large ripe peaches (yellow or Elberta), sliced into thin wedges
  • 1 cup strawberries, hulled and halved
  • ½ cup blueberries (fresh or thawed if frozen)
  • ½ cup red grapes, halved
  • 23 Tbsp fresh mint leaves, finely chopped

For the Citrus Glaze

  • 1 Tbsp lime or lemon juice
  • 12 Tbsp honey or maple syrup (optional)

Optional Add-ins

  • Citrus segments such as orange or grapefruit
  • Additional berries like raspberries or blackberries
  • Toasted nuts or seeds (almonds, pecans, chia)
  • Greek yogurt or cottage cheese for creamy topping

Instructions

  1. Prep your fruit: Wash all produce thoroughly. Slice the peaches into thin wedges, either leaving the skin on or peeling it based on your preference. Hull and halve the strawberries, halve the grapes, and keep the blueberries whole.
  2. Make the citrus glaze: In a small bowl, whisk together the lime or lemon juice with honey or maple syrup. Taste and adjust the sweetness depending on how ripe and sweet your fruit is.
  3. Combine the fruit: Place the peaches, strawberries, blueberries, and grapes into a large mixing bowl. Drizzle the citrus glaze evenly over the fruit.
  4. Toss gently: Using a rubber spatula or clean hands, gently mix the salad to coat all the fruit. Be careful not to mash the delicate peaches and berries to maintain their texture and presentation.
  5. Add mint & chill: Stir in the finely chopped fresh mint leaves. Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld and the salad to chill.
  6. Serve beautifully: Transfer the salad to a serving bowl or portion into individual jars or glasses. Garnish with extra mint leaves, a sprinkle of lime zest, or a light drizzle of glaze for extra visual and flavor appeal.

Notes

  • Use ripe peaches that yield slightly to gentle pressure for the best sweetness and aroma.
  • If peaches are a bit firm, let them ripen at room temperature for 1-2 days before using.
  • For a vegan version, use maple syrup instead of honey and skip any dairy toppings.
  • Omit added sweeteners if fruits are very ripe or if you prefer a low-sugar salad.
  • Frozen or canned peaches can be used if fresh are unavailable; drain canned peaches well to avoid excess liquid.
  • Add nuts or seeds for extra crunch and protein if desired.
  • This salad can be prepared a few hours ahead but is best eaten within 24 hours for optimal freshness.
