Sweet Potatoes

Steak and Seasonings

  • 1 lb flat iron steak, diced into 1” pieces
  • 3 tbsp olive oil, divided
  • 2 cloves garlic, minced
  • 2 tsp cracked black pepper
  • 2 tbsp coconut aminos

Vegetables and Garnish

  • 2 bell peppers, seeded and diced into 1” pieces
  • 4 green onions, thinly sliced
  • 2 tbsp fresh chopped cilantro

Instructions

  1. Prepare Sweet Potatoes: Place diced sweet potatoes into a microwave-safe bowl and sprinkle with 1 teaspoon salt. Cover with a plate and microwave on high for 4-6 minutes, stirring once halfway, until just tender but not mushy.
  2. Cook Steak: Heat a 12-inch skillet over high heat. Add 2 tablespoons olive oil and heat until shimmering. Add steak pieces in a single layer and cook, turning every two minutes until browned and medium in the center (about 10 minutes). Remove steak with a slotted spoon and set aside.
  3. Cook Sweet Potatoes: Add remaining 1 tablespoon olive oil to the skillet. Toss in sweet potatoes to coat and cook, stirring occasionally, until browned, about 3-4 minutes.
  4. Sauté Garlic: Create a well in the center of the skillet and add minced garlic. Sauté, stirring occasionally, until fragrant, about 1 minute.
  5. Add Vegetables: Add diced bell peppers and sliced green onions to the skillet with the sweet potatoes. Toss and sauté until peppers are tender but still crisp, about 3-4 minutes.
  6. Combine Steak and Flavorings: Return steak and its juices to the skillet. Add coconut aminos and toss all ingredients together. Cook for an additional 1-2 minutes until the liquid evaporates.
  7. Finish and Serve: Add cracked black pepper and chopped cilantro. Toss to combine, remove from heat, and portion onto plates. Garnish with additional cilantro if desired and serve immediately.
