  • 4 oz. cream cheese
  • 2 oz. feta cheese crumbles
  • 2 oz. shredded mozzarella cheese

Instructions

  1. Make seasoning: In a small bowl, mix together paprika, cumin powder, salt, and chili powder to create the spice mix. Set aside for later use.
  2. Make stuffing: Roughly chop the baby spinach and add it to a mixing bowl. Add cream cheese, feta crumbles, and shredded mozzarella cheese. Use your hands to massage and combine all ingredients thoroughly until the mixture forms a thick, cohesive paste.
  3. Cut the chicken: Using a sharp knife, carefully cut a pocket into the side of each chicken breast, making sure not to cut all the way through.
  4. Stuff chicken: Divide the prepared spinach and cheese mixture into four equal portions. Spoon each portion into the pocket of each chicken breast. Secure the opening with toothpicks to keep the stuffing inside during cooking.
