Puff Pastry
- 1 sheet of puff pastry (store-bought or homemade)
Spinach Filling
- 1 cup fresh spinach, chopped (or frozen, thoroughly drained)
- 1 tablespoon olive oil
- 1 clove garlic, minced
Cheese Mixture
- ½ cup feta cheese, crumbled
- ¼ cup cream cheese, softened
- ¼ teaspoon dried oregano
- Salt and pepper to taste
Finishing
- 1 egg, beaten (for egg wash)
- Prepare the Spinach Filling: Heat the olive oil in a pan over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Stir in the chopped spinach and cook until wilted, or cook until the moisture evaporates if using frozen spinach. Remove from heat and let it cool completely.
- Mix the Cheese Blend: In a bowl, combine the cooled spinach mixture with crumbled feta cheese, softened cream cheese, dried oregano, and salt and pepper to taste. Stir everything together until well blended and creamy.
- Assemble the Twists: Unroll the puff pastry sheet on a lightly floured work surface. Spread the spinach and cheese mixture evenly over one half of the pastry sheet. Fold the other half of the pastry over the filling to form a rectangle and gently press down to seal the edges.
- Cut & Twist: Using a sharp knife or pizza cutter, slice the folded pastry into 1-inch wide strips. Hold each strip at both ends and gently twist to create spiral shapes. Lay the twists on a baking sheet lined with parchment paper, spacing them evenly.
- Egg Wash & Bake: Brush each twist generously with the beaten egg to give them a beautiful shiny and golden finish. Preheat the oven to 375°F (190°C) and bake the twists for 15–20 minutes, or until puffed up and golden brown. Remove from oven and cool slightly before serving.

- For best results, use fresh spinach but frozen spinach can be used if thoroughly drained.
- You can substitute cream cheese with ricotta for a different texture.
