Ingredients

Scale

For the Batter

  • ⅓ cup unsalted butter, melted
  • ¾ cup whole milk
  • 2 teaspoons vanilla extract
  • 1 ½ cups sugar
  • 1 ½ cups all-purpose flour
  • 2 ¼ teaspoons baking powder
  • ¾ teaspoon salt
  • 2 teaspoons cinnamon

For the Topping and Assembly

  • 1 ½ cups brown sugar, packed
  • 1 ½ cups hot water
  • ¼ cup sugar
  • ½ teaspoon cinnamon

Instructions

  1. Preheat the oven: Set the oven to 350°F (175°C). Pour the melted butter into a 9×13-inch baking pan, making sure to evenly coat the bottom.
  2. Prepare the batter: In a large bowl, whisk together the whole milk, vanilla extract, and sugar until combined. Add the all-purpose flour, baking powder, salt, and cinnamon, whisking gently until just combined to avoid overmixing.
  3. Assemble the cobbler: Spoon the batter carefully over the melted butter in the pan without stirring. Evenly sprinkle the packed brown sugar on top of the batter. Then, carefully pour the hot water over the entire mixture without mixing to create the cobbler texture.
  4. Bake: Place the baking pan in the preheated oven and bake for 30 to 35 minutes, or until the top is golden brown and mostly set.
  5. Add the topping: In a small bowl, combine the sugar and cinnamon. Immediately after removing the cobbler from the oven, sprinkle this cinnamon sugar mixture evenly over the hot cobbler.
  6. Cool and serve: Allow the cobbler to cool slightly for a few minutes before serving. It is best enjoyed warm, especially when paired with a scoop of vanilla ice cream.

Notes

  • Do not stir the batter after adding hot water to allow the distinct layers to form during baking.
  • This cobbler is best served warm, but leftovers can be refrigerated and gently reheated.
  • A scoop of vanilla ice cream or whipped cream makes an excellent accompaniment.
  • For a dairy-free version, substitute whole milk with almond or oat milk and use a dairy-free butter alternative.
  • Make sure the water is hot to activate the sugar and create the sauce layer effectively.
