These S’mores Bars combine the classic flavors of graham crackers, marshmallow creme, and rich chocolate into a delicious, layered dessert bar. Easy to prepare and perfect for any occasion, they feature a buttery graham cracker base and topping, gooey marshmallow center, and melted chocolate pieces baked to perfection.

Base and Topping Dough

  • ½ cup unsalted butter
  • ¾ cup light brown sugar (or dark brown sugar)
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • ½ teaspoon baking powder
  • 1 cup graham cracker crumbs (about 8 full graham crackers)
  • ¼ teaspoon salt

Filling

  • 1 7-ounce jar marshmallow creme
  • 2 large chocolate bars (about 4 oz each)

Instructions

  1. Preheat Oven and Prepare Baking Dish: Preheat your oven to 350° Fahrenheit. Line a baking dish with parchment paper, leaving excess parchment paper hanging over two sides to make lifting the bars easier once baked, then set the dish aside.
  2. Cream Butter and Sugar: In a mixing bowl, add the unsalted butter and light brown sugar. Using a hand mixer or stand mixer on medium speed, beat the mixture until pale and fluffy, which should take about 2 to 3 minutes.
  3. Add Egg and Vanilla: To the creamed butter and sugar, add the large egg and vanilla extract. Mix thoroughly until the ingredients are fully incorporated and the mixture is smooth. Set aside.
  4. Mix Dry Ingredients: In a separate medium bowl, whisk together the baking powder, graham cracker crumbs, and salt until well blended.
  5. Combine Wet and Dry Mixtures: Gradually add the graham cracker crumb mixture to the butter mixture, stirring until just combined into a thick dough.
  6. Form Bottom Layer: Transfer about half to two-thirds of the dough to the prepared baking dish. Press it firmly into an even layer covering the entire bottom of the dish.
  7. Spread Marshmallow Creme: Evenly spread the entire jar of marshmallow creme over the dough layer. To make spreading easier, wet your spatula with hot water as needed.
  8. Add Chocolate Layer: Break the chocolate bars into pieces and sprinkle them over the marshmallow layer. The chocolate does not need to cover the marshmallow fully.
  9. Add Top Dough Layer: Divide the remaining dough into smaller portions, flatten each evenly, and place them over the chocolate pieces. Arrange these pieces to partially cover the chocolate, noting that the top layer will not cover it completely.
  10. Bake the Bars: Place the baking dish in the preheated oven and bake for approximately 30 minutes, or until a toothpick inserted in the center comes out clean without graham cracker crumbs sticking.
  11. Cool Completely: Remove the dish from the oven and set it on a wire cooling rack. Let the bars cool entirely before lifting them out using the overhanging parchment paper and slicing.

  • For easier spreading of marshmallow creme, dipping your spatula in hot water before spreading helps to prevent sticking.
