Ingredients

Scale

For the Crostini Base

  • 1 thin baguette, sliced
  • 2 Tbsp olive oil

For the Cream Cheese Spread

  • 1 8 oz package of cream cheese, softened
  • 1/4 cup fresh dill, chopped well
  • 1 Tbsp fresh squeezed lemon juice
  • 1 clove fresh grated garlic
  • 1 tsp salt
  • 1/2 tsp fresh cracked pepper

For Topping

  • 68 oz smoked salmon
  • 2 Tbsp capers
  • 12 sliced green onions
  • 1/2 cup fresh arugula
  • Cucumber slices – enough for each baguette slice
  • Optional: Parsley as a garnish
  • Optional: Additional squeeze of lemon

Instructions

  1. Prepare the baguette slices: Brush olive oil onto the sliced baguette and broil for 2 minutes, keeping a close eye to avoid burning. For crisper crostini, broil an additional minute if desired.
  2. Make the cream cheese spread: In a bowl or small food processor, combine softened cream cheese, chopped dill, lemon juice, grated garlic, salt, and pepper. Blend or mash with a fork until the mixture is smooth and well combined.
  3. Assemble the base layers: Once the baguette slices are toasted, spread the cream cheese mixture generously onto each slice. Add a few pieces of fresh arugula and a cucumber slice on top of the spread.
  4. Add the smoked salmon and toppings: Place pieces of smoked salmon over the arugula and cucumber. Sprinkle capers and sliced green onions evenly on top.
  5. Garnish and serve: Finish with a sprinkling of fresh parsley and additional cracked pepper and salt if desired. Serve immediately or prepare the cream cheese spread ahead and toast the bread just before serving for best freshness.

Notes

  • Watch the bread closely when broiling to prevent burning.
  • The cream cheese spread can be made ahead of time and refrigerated, saving preparation time before serving.
  • For a citrusy twist, add an extra squeeze of fresh lemon juice just before serving.
  • Use thinly sliced cucumbers and fresh arugula to add a crisp texture and fresh flavor contrast.
  • This appetizer is best served fresh but can be assembled shortly before a party.
