Filling
- 6 oz canned tiny shrimp, drained
- 8 oz cream cheese, room temperature
- 4 oz shredded sharp cheddar cheese
- 1 tsp Old Bay seasoning
- Pinch of salt
Jalapenos
- 16 jalapenos, sliced in half, seeds and ribs removed
- Preheat the Oven: Preheat your oven to 400°F (200°C) to ensure it’s ready for baking the stuffed jalapenos evenly.
- Prepare the Filling: In a mixing bowl, combine the drained tiny shrimp, room temperature cream cheese, shredded sharp cheddar cheese, Old Bay seasoning, and a pinch of salt. Mix thoroughly until the ingredients are well blended and creamy.
- Stuff the Jalapenos: Take each halved jalapeno and generously spoon the shrimp and cheese filling into the cavity, distributing it evenly across all 16 halves.
- Bake the Jalapenos: Arrange the stuffed jalapenos cut side up on a baking sheet. Bake in the preheated oven for about 20 minutes or until the jalapenos are tender and the filling is lightly browned on top.
Notes
- For milder heat, remove all seeds and ribs from the jalapenos completely.
- You can substitute cheddar cheese with Monterey Jack for a different flavor profile.
- Serve warm as a tasty appetizer or party snack.
- Storage: Refrigerate leftovers in an airtight container for up to 3 days and reheat before serving.
- Ensure cream cheese is at room temperature for easier mixing.
