Protein Pudding Mix
- 0.67 cup (150g) non-fat Greek yogurt
- 0.33 cup (30g) whey vanilla protein powder
- 4 teaspoons (11g) banana cream flavor instant pudding mix, sugar-free
- 2 teaspoons (10ml) unsweetened almond milk
Layers
- 3 whole vanilla wafers, sugar-free (recommended), crushed (14g)
- 0.5 whole medium banana, sliced (60g)
- Prepare the pudding mixture: In a medium-sized bowl, whisk together the non-fat Greek yogurt, vanilla whey protein powder, banana cream flavor instant pudding mix, and unsweetened almond milk. Add the almond milk gradually to achieve a smooth pudding-like consistency.
- Prepare layers: Crush the sugar-free vanilla wafers into fine crumbs and slice half of a medium banana into thin pieces.
- Assemble the pudding: In jars or serving cups, add a layer of the pudding mixture at the bottom, followed by crushed vanilla wafers, then a layer of banana slices. Repeat these layers to create two complete sets of pudding, wafers, and banana.
- Chill and serve: Refrigerate the assembled pudding jars for at least 15 to 30 minutes to allow the flavors to meld and the pudding to set, enhancing texture and taste before serving.
Notes
- Use sugar-free vanilla wafers and pudding mix to keep sugar content low.
- Adjust the almond milk quantity for desired pudding thickness.
- Chilling improves the texture and flavor, but can be served immediately if needed.
- Perfect for a high-protein, low-fat dessert or snack option.
