  • 12 flour tortillas
  • ¾ cup crumbled goat cheese
  • Lime wedges, for serving

Instructions

  1. Make the Filling: In a large sauté pan, heat the olive oil over medium heat. Add the diced red onion and sauté until tender, about 4 to 5 minutes. Add the minced garlic and sauté for an additional 1 minute until fragrant.
  2. Cook Peppers and Mushrooms: Add the diced poblano peppers and thinly sliced mushrooms to the pan. Sauté until both are tender and cooked through, approximately 7 to 8 minutes. Season with salt and freshly ground black pepper to taste.
  3. Prepare the Tomato Salsa: In a medium bowl, toss the halved cherry tomatoes with the lime juice and chopped fresh parsley. Season lightly with salt and black pepper and mix gently to combine.
  4. Toast the Tortillas: Heat a large skillet over medium heat. Working in batches, place 2 or 3 flour tortillas in the pan and heat until lightly browned and warm on each side, about 1 minute per side. Repeat this process until all tortillas are toasted.
  5. Assemble and Serve: Divide the poblano and mushroom filling evenly among the toasted tortillas. Top each with about 2 tablespoons of the tomato mixture and sprinkle with 1 to 2 teaspoons of crumbled goat cheese. Garnish with lime wedges and serve immediately for best flavor.
