Instructions

  1. Prepare the batter: Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan to prevent sticking. In a large mixing bowl, mash the ripe bananas until smooth. Stir in the creamy peanut butter, sugar, melted butter, vanilla extract, and the large egg, mixing until well combined. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add these dry ingredients to the wet mixture and mix gently until just combined, being careful not to overmix.
  2. Layer the batter and jelly: Pour half of the banana bread batter into the prepared loaf pan, spreading it out evenly. Dollop teaspoons of your chosen jelly over the batter in various spots. Using the tip of a butter knife or toothpick, gently swirl the jelly through the batter to create visible streaks without fully blending it in.
  3. Add the second layer: Pour the remaining batter over the jelly layer and smooth the surface with a spatula. Repeat the process of adding dollops of jelly on top and gently swirling to create a marbled effect in the bread.
  4. Bake the bread: Place the loaf pan in the preheated oven and bake for 50 to 60 minutes. The bread is done when a toothpick inserted into the center comes out clean or with just a few moist crumbs attached. Once baked, let the bread cool in the pan for about 10 minutes before removing it and transferring to a wire rack to cool completely for best texture and easier slicing.
