  • 3 medium peaches
  • 3 tbsp sugar

Instructions

  1. Make the Granola: Preheat your oven to 325°F (165°C). In a mixing bowl, combine oats, cinnamon, nutmeg, salt, shredded coconut, chopped pecans, olive oil, maple syrup, vanilla extract, and almond butter. Mix thoroughly until all ingredients are well coated. Spread the mixture evenly on a baking sheet lined with parchment paper. Bake for approximately 20-25 minutes, stirring halfway through to ensure even toasting, until golden and fragrant. Remove from oven and allow to cool.
  2. Make the Roasted Peaches: While the granola bakes, slice the peaches and place them in a bowl. Toss the peach slices with sugar and let them sit for 10 minutes to release their natural juices. Line a baking sheet with parchment paper and spread the sugared peaches evenly on it. Once the granola is done, increase the oven temperature to 400°F (204°C). Roast the peaches for 12-14 minutes, or until they become juicy and tender when pierced with a fork. Remove from oven and set aside.
  3. Assemble Your Bowls: Take your serving bowls and spoon a generous amount of vanilla yogurt into each. Top the yogurt with warm roasted peaches and a handful of the freshly baked granola. Serve immediately for the best flavor and texture combination.
