Pasta & Cheese

  • 2 cups elbow macaroni, uncooked
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese

Instructions

  1. Sauté Ground Meat: In a large skillet over medium-high heat, cook the ground beef or turkey until it is halfway cooked. Remove the skillet from heat.
  2. Add Aromatics and Finish Cooking: Add the minced garlic, diced onion, and olive oil to the skillet. Return to heat and continue cooking until the meat is fully browned and onions are softened.
  3. Add Liquids and Seasonings: Stir in water, beef broth, tomato sauce, diced tomatoes, Italian seasoning, Adobo seasoning, bay leaves, seasoned salt, and black pepper. Mix thoroughly to combine all ingredients.
  4. Simmer Covered: Lower the heat, cover the skillet, and allow the mixture to cook for about 20 minutes, stirring occasionally to prevent sticking.
  5. Add Macaroni: Stir in the uncooked elbow macaroni until it is evenly combined with the sauce and meat mixture.
  6. Cook the Macaroni: Cover the skillet again and simmer for approximately 30 minutes, stirring occasionally to ensure even cooking and prevent sticking.
  7. Remove Bay Leaves and Add Cheddar: Once the macaroni is cooked through, remove the bay leaves. Stir in the shredded cheddar cheese until melted and well incorporated.
  8. Add Mozzarella Before Serving: Just before serving, sprinkle the shredded mozzarella cheese on top and gently fold it in, allowing it to melt from the residual heat.
