Brownie Base
- 2 cups medjool dates, tightly packed (pitted)
- 1 1/2 cups almond flour
- 1 cup raw walnuts
- 1/2 cup cocoa powder (or cacao powder)
- 1 tsp vanilla extract
- 1/4 tsp salt
Chocolate Ganache
- 1 1/2 cups chocolate chips (dairy-free/vegan)
- 2/3 cup canned coconut cream
- 1 tbsp maple syrup
- 1 tsp vanilla extract
Topping
- 1/4 cup rainbow candy coated chips (vegan friendly)
- Prepare the Pan: Line a 9×9 inch square dish with parchment paper, making sure some paper overhangs the edges. This will prevent the brownies from sticking and allow for easy removal later.
- Make the Brownie Base: In a food processor, combine the almond flour, walnuts, cocoa powder, vanilla extract, and salt. Pulse until the walnuts reach a flour-like texture. Add the medjool dates and process again until a sticky dough forms. Press this mixture firmly and evenly into the prepared dish.
- Prepare the Chocolate Ganache: In a bowl, combine the chocolate chips, maple syrup, and vanilla extract. Scoop out all the contents of the canned coconut cream (both thick cream and liquid) into another bowl and microwave for 1 minute and 45 seconds. Whisk the coconut cream until smooth, then pour 2/3 cup over the chocolate chip mixture. Let sit for 1-2 minutes, then whisk until smooth. If needed, microwave in 15-30 second intervals and whisk until fully melted and glossy.
- Assemble the Brownies: Pour the chocolate ganache evenly over the brownie base. Spread smooth with a spatula and gently tap the dish on the counter to even out the layer. Sprinkle the rainbow candy coated chips on top for a fun cosmic effect.
- Chill to Set: Place the brownies in the refrigerator for at least 4 hours or until the chocolate ganache has fully set and firmed up.
- Serve: Lift the brownies out of the dish using the parchment paper overhang. Slice into 16 squares and enjoy your no-bake vegan cosmic brownies!
Notes
- Medjool dates should be soft and pitted for easier blending.
- Use vegan or dairy-free chocolate chips to keep the recipe fully vegan.
- Canned coconut cream should be well stirred before use; refrigerate overnight and scoop the thick cream off the top for best results.
- Store leftovers in an airtight container in the refrigerator for up to 5 days.
- This recipe can be doubled to fit a 9×13 inch pan by adjusting chilling time accordingly.
