Instructions

  1. Prepare the Pan: Line a 9×9 inch square dish with parchment paper, making sure some paper overhangs the edges. This will prevent the brownies from sticking and allow for easy removal later.
  2. Make the Brownie Base: In a food processor, combine the almond flour, walnuts, cocoa powder, vanilla extract, and salt. Pulse until the walnuts reach a flour-like texture. Add the medjool dates and process again until a sticky dough forms. Press this mixture firmly and evenly into the prepared dish.
  3. Prepare the Chocolate Ganache: In a bowl, combine the chocolate chips, maple syrup, and vanilla extract. Scoop out all the contents of the canned coconut cream (both thick cream and liquid) into another bowl and microwave for 1 minute and 45 seconds. Whisk the coconut cream until smooth, then pour 2/3 cup over the chocolate chip mixture. Let sit for 1-2 minutes, then whisk until smooth. If needed, microwave in 15-30 second intervals and whisk until fully melted and glossy.
  4. Assemble the Brownies: Pour the chocolate ganache evenly over the brownie base. Spread smooth with a spatula and gently tap the dish on the counter to even out the layer. Sprinkle the rainbow candy coated chips on top for a fun cosmic effect.
