Chocolate Layer
- 1/2 cup semisweet or dark chocolate chips
Cookie Dough Layer
- 1/4 cup oat flour (30g)
- 1/4 cup vanilla protein powder (31g)
- 3 Tbsp peanut butter (45g)
- 2 Tbsp brown sugar sweetener (14g)
- 2 Tbsp maple syrup (sugar-free pancake syrup recommended)
- 1/8 tsp cinnamon
- Pinch of salt
Marshmallow Topping
- 6 Tbsp marshmallow fluff
- 12 mini marshmallows (optional, for presentation)
- Prepare Pan and Melt Chocolate: Line a muffin pan with 6 cupcake liners. Melt the chocolate chips in the microwave until smooth.
- Create Chocolate Base: Spoon about 1/2 tablespoon of melted chocolate into the bottom of each cupcake liner. Tap the pan gently on the counter to spread the chocolate evenly and use a spoon to bring it slightly up the sides. Place the pan in the freezer for 5-10 minutes to allow the chocolate to harden.
- Make Cookie Dough: In a bowl, mix together oat flour, vanilla protein powder, peanut butter, brown sugar sweetener, maple syrup, cinnamon, and salt until fully combined into a dough. Roll the dough into balls, then flatten them.
- Assemble Cookie Dough Layer: Press each flattened dough ball on top of the hardened chocolate base in the cupcake liners.
- Add Marshmallow Topping and Chocolate Drizzle: Spoon one tablespoon of marshmallow fluff onto each cookie dough layer. Top with 2 mini marshmallows if desired. Drizzle the remaining melted chocolate over the marshmallow topping.
- Freeze to Set: Return the pan to the freezer and chill for at least 30 minutes until all layers are set and firm.
