No Bake S’mores Cookie Dough Bites Recipe

Introduction

No Bake S’mores Cookie Dough Bites are a fun and easy treat that combines the classic flavors of s’mores with a soft, protein-packed cookie dough center. These bite-sized delights are perfect for a quick snack or a no-fuss dessert.

A white ribbed plate holds five mini cookie-like desserts with three distinct layers: the bottom layer is a light brown, crumbly base, the middle is a thin, smooth dark chocolate layer, topped by white marshmallow dollops partially covered and drizzled with dark chocolate in an irregular pattern. One dessert is cut in half and rests on top, showing the layers more clearly. The plate sits on a white marbled surface, with a beige cloth and a small wooden board with bread in the background. photo taken with an iphone --ar 4:5 --v 7

Ingredients

  • 1/2 cup semisweet or dark chocolate chips
  • 1/4 cup oat flour (30g)
  • 1/4 cup vanilla protein powder (31g) (I used PEScience)
  • 3 Tbsp peanut butter (45g)
  • 2 Tbsp brown sugar sweetener (14g) (I used Truvia)
  • 2 Tbsp maple syrup (I used sugar-free pancake syrup)
  • 1/8 tsp cinnamon
  • Pinch of salt
  • 6 Tbsp marshmallow fluff
  • 12 mini marshmallows (optional for presentation)

Instructions

  1. Step 1: Line a muffin pan with 6 cupcake liners.
  2. Step 2: Melt the chocolate chips in the microwave. Add about 1/2 tablespoon of melted chocolate to the bottom of each cupcake liner. Tap the pan on the counter to spread the chocolate evenly and use a spoon to bring the chocolate slightly up the sides. Place the pan in the freezer for 5–10 minutes to harden.
  3. Step 3: While the chocolate hardens, prepare the cookie dough by mixing oat flour, protein powder, peanut butter, brown sugar sweetener, maple syrup, cinnamon, and salt until combined. Form the dough into balls, then flatten them.
  4. Step 4: Press each flattened dough piece on top of the hardened chocolate base in the cupcake liners.
  5. Step 5: Add one tablespoon of marshmallow fluff on top of the cookie dough in each cup. If desired, place two mini marshmallows on top for decoration.
  6. Step 6: Drizzle the remaining melted chocolate over the tops of the bites and return the pan to the freezer for at least 30 minutes to fully harden before serving.

Tips & Variations

  • Use natural peanut butter for a smoother texture or swap with almond butter for a different nutty flavor.
  • For a dairy-free version, choose dairy-free chocolate chips and marshmallow fluff.
  • Add a pinch of sea salt on top of each bite before freezing to enhance the chocolate flavor.
  • Experiment with flavored protein powders such as chocolate or cookies and cream for a taste twist.
  • Store the bites in an airtight container in the freezer for best texture and freshness.

Storage

Store the cookie dough bites in an airtight container in the freezer for up to 2 weeks. Thaw them in the refrigerator or at room temperature for a few minutes before serving. Reheat is not recommended as the chocolate coating may soften and the texture can change.

How to Serve

The image shows a white plate with several cookie-like treats arranged on it. Each treat has three layers: the bottom layer is solid dark brown chocolate, the middle layer is a light brown crumbly cookie base, and the top layer is white fluffy marshmallow. The marshmallow layer is drizzled with dark chocolate in a zigzag pattern, adding a rich texture on top. Two of the treats are cut in half, showing the thick cookie layer and marshmallow clearly between the chocolate layers. The plate is set on a white marbled surface with a soft beige cloth in the background. Photo taken with an iphone --ar 4:5 --v 7

FAQs

Can I use regular flour instead of oat flour?

Yes, you can substitute regular all-purpose flour for oat flour, but the texture and flavor will differ slightly. Oat flour gives a nuttier taste and is gluten-free if you choose certified oats.

Is this recipe suitable for kids?

Absolutely! These no bake bites are fun, easy to make, and have familiar s’mores flavors that kids love. Just make sure to supervise if young children are handling hot melted chocolate.
