Ingredients

Scale

Vegetables

  • 2 medium carrots (diced into small cubes)
  • 2 small zucchinis (diced into small cubes)
  • 1/2 large onion (diced into small cubes)
  • 6 celery stalks (diced into small cubes)

Liquids and Canned Goods

  • 28 oz canned diced tomatoes
  • 32 oz vegetable broth
  • 2 cups water

Beans

  • 15 oz canned Great Northern beans (drained)
  • 15 oz canned Kidney beans (drained)

Seasonings and Others

  • 1 tbsp Italian seasoning
  • 1 tbsp dry basil
  • 2 cloves garlic (minced)
  • 1 tbsp olive oil
  • 1/2 cup pasta (small shapes like ditalini or elbow macaroni recommended)

Instructions

  1. Sauté Vegetables: Preheat the pot over medium heat and add 1 tablespoon of olive oil. Add diced zucchini, carrots, celery, and onions. Sauté for about 10 minutes until the vegetables soften and develop a fragrant aroma.
  2. Add Tomatoes and Seasonings: Pour in the canned diced tomatoes along with their juices. Stir in Italian seasoning and dry basil, mixing well to evenly distribute the flavors.
  3. Add Broth, Beans, and Pasta: Pour in the vegetable broth, then add the kidney and Great Northern beans. Add pasta and stir to combine. Bring the mixture to a simmer and cook for about 10 minutes, allowing the pasta to cook and flavors to meld. If the soup thickens too much, add up to 2 more cups of water to adjust consistency.
  4. Add Garlic and Simmer: Press or stir in the minced garlic into the pot. Let the soup simmer for another 10 minutes to let the garlic infuse its flavor fully.
  5. Serve Warm: Once everything is tender and well combined, ladle the minestrone soup into bowls and serve warm for a comforting meal.

Notes

  • You can substitute any pasta shape you prefer, but small-sized pasta works best in this soup.
  • To make it vegan and gluten-free, ensure to use gluten-free pasta and verify the vegetable broth ingredients.
  • Adding freshly grated Parmesan cheese as a topping enhances the flavor, if not vegan.
  • For more texture, consider adding chopped kale or spinach during the last few minutes of cooking.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
