Ingredients

Scale

Dressing and Sauce

  • 1 can cream of chicken soup
  • ½ cup cottage cheese
  • ½ cup sour cream
  • 4 ounces cream cheese (at room temperature)
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon onion powder
  • 1 ½ teaspoons garlic powder (divided)
  • 2 teaspoons dried parsley

Main Ingredients

  • 5 cups shredded rotisserie or cooked chicken
  • 1 can corn (drained well)
  • ½ cup sliced scallions (reserve 2 tablespoons for garnish)

Topping

  • 30 buttery round crackers (such as Ritz, crushed)
  • 4 tablespoons unsalted butter (melted)
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat the oven: Preheat your oven to 350°F (175°C) to prepare for baking the casserole.
  2. Mix the sauce: In a medium bowl, combine cream of chicken soup, cottage cheese, sour cream, cream cheese, Cajun seasoning, onion powder, dried parsley, and 1 teaspoon of garlic powder. Stir until the mixture is well blended and smooth.
  3. Add the chicken mixture: Fold in the shredded chicken, drained corn, and ½ cup sliced scallions (excluding 2 tablespoons reserved for garnish) into the sauce mixture until evenly coated.
  4. Prepare the cracker topping: In another bowl, mix the crushed buttery crackers, melted butter, and the remaining ½ teaspoon garlic powder until combined.
  5. Assemble the casserole: Spoon the chicken mixture evenly into an 11×7-inch or 9-inch square baking dish. Sprinkle shredded mozzarella cheese evenly over the top, then cover with the cracker mixture.
  6. Bake: Place the casserole on a foil-lined baking sheet and bake in the preheated oven for about 35 minutes, or until the cracker topping is golden brown and the edges are bubbly.
  7. Garnish and serve: Remove from oven and sprinkle the reserved 2 tablespoons of scallions over the top. Serve warm and enjoy!

Notes

  • Using rotisserie chicken saves time and adds great flavor.
  • Make sure the cream cheese is at room temperature for easy mixing.
  • Adjust Cajun seasoning to taste if you prefer less spice.
  • Crushing crackers evenly ensures a crispy, uniform topping.
  • Using a foil-lined baking sheet catches any drips and makes cleanup easier.
  • You can substitute mozzarella with cheddar or a cheese blend if preferred.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven for best texture.
