  • 0.5 cup Feta cheese (Crumbled)

Vegetables

  • 2 medium Zucchini (Sliced into half-moons)
  • 2 Red bell peppers (Diced into chunks)
  • 1 large Red onion (Sliced into strips)
  • 2 cups Cherry tomatoes (Halved)
  • 4 cloves Garlic (Minced)
  • 1/4 cup Sun-dried tomatoes (Chopped)

  • 3 tbsp Extra virgin olive oil (Divided for cooking)
  • Salt & black pepper (To taste)
  • 1 cup Kalamata olives (Pitted and halved)
  • 2 tsp Dried oregano
  • 1 tsp Dried basil
  • 1/2 tsp Dried thyme
  • 1 Lemon (Juice only)
  • 2 tbsp Fresh parsley (Optional garnish)

Instructions

  1. Prep ingredients: Chop all vegetables as directed: slice zucchini into half-moons, dice red bell peppers, slice the red onion into strips, halve the cherry tomatoes, mince garlic, and chop the sun-dried tomatoes. Pit and halve the Kalamata olives. Set aside.
  2. Sear chicken: Heat 1 tablespoon of extra virgin olive oil in a large skillet over medium-high heat. Season the bite-sized chicken pieces with salt and black pepper, then add to the skillet. Cook until golden brown and fully cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
  3. Sauté vegetables: In the same skillet, add the remaining 2 tablespoons of olive oil. Add the sliced red onions and minced garlic first, sautéing for 2-3 minutes until fragrant and softened. Then add the zucchini, red bell peppers, and sun-dried tomatoes. Continue to sauté for another 5-7 minutes until the vegetables are tender but still retain some crunch.
  4. Combine and season: Return the cooked chicken to the skillet with the vegetables. Add the halved cherry tomatoes, Kalamata olives, dried oregano, dried basil, dried thyme, salt, and black pepper to taste. Toss well to combine all ingredients and heat through for 2-3 minutes.
  5. Finish with lemon and feta: Remove the skillet from heat and squeeze the fresh lemon juice over the stir fry. Sprinkle crumbled feta cheese on top, allowing it to soften slightly. Garnish with fresh parsley if desired.
  6. Serve: Serve the Mediterranean Chicken Stir Fry immediately as a flavorful and healthy main dish. It pairs well with rice, quinoa, or crusty bread.
