Marry Me Salmon is a luscious, creamy skillet dish featuring perfectly seared salmon fillets bathed in a rich sauce of sun-dried tomatoes, garlic, Parmesan, and fresh basil. This flavorful, elegant recipe comes together quickly for a romantic weeknight dinner or special occasion.

Ingredients

Scale

Salmon

  • 4 salmon fillets (6 oz each)
  • 2 tablespoons olive oil
  • Salt and black pepper to taste

Sauce

  • 3 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup sun-dried tomatoes, chopped
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/4 cup fresh basil, chopped (for garnish)

Instructions

  1. Prepare the Salmon: Pat the salmon fillets dry with paper towels to ensure a good sear. Season both sides generously with salt and black pepper for balanced flavor.
  2. Sear the Salmon: Heat olive oil in a large skillet over medium-high heat. Place salmon fillets skin-side down if applicable. Cook for 3-4 minutes per side until golden brown and nearly cooked through. Remove salmon from skillet and set aside to rest.
  3. Make the Sauce: Lower heat to medium and add minced garlic to the skillet. Sauté for about 1 minute until fragrant but not browned. Pour in chicken broth and simmer for 2 minutes, scraping any flavorful bits from the pan bottom.
  4. Stir in heavy cream, chopped sun-dried tomatoes, grated Parmesan cheese, Italian seasoning, and red pepper flakes if using. Let sauce simmer gently for 3-4 minutes until it thickens slightly and flavors meld.
  5. Add the Salmon Back: Return the salmon fillets to the skillet, nestling them into the sauce. Spoon sauce over the fillets, and cook for another 2-3 minutes until salmon is fully cooked through and flakes easily with a fork.
  6. Garnish and Serve: Sprinkle freshly chopped basil over the salmon before serving. Enjoy hot, paired nicely with pasta, rice, or steamed vegetables for a complete and decadent meal.

Notes

  • For best results, use skin-on salmon for crispiness and to help hold the fillets together during cooking.
  • If you prefer a lighter sauce, substitute half-and-half for heavy cream.
  • You can replace chicken broth with vegetable broth to make the dish pescatarian.
  • Adjust red pepper flakes to your preferred spice level or omit for a milder flavor.
  • Leftovers keep well refrigerated for up to 2 days; reheat gently to avoid overcooking the salmon.
