Instructions

  1. Preheat the oven. Preheat the oven to 400°F and line a 9×13-inch baking sheet with parchment paper to ensure easy cleanup and prevent sticking.
  2. Roast the potatoes. Add the halved potatoes to the sheet pan and toss them with 1 tbsp olive oil, 1 tsp salt (half of the total), half of the black pepper, paprika, garlic powder, and onion powder until well coated. Roast in the oven for about 20 minutes, or until the potatoes begin to soften and turn lightly golden.
  3. Season the salmon. While the potatoes roast, season the salmon fillets with the remaining salt, pepper, paprika, garlic powder, and onion powder, then set aside.
  4. Make the maple glaze. In a small bowl, whisk together the maple syrup, Dijon mustard, lemon juice, red pepper flakes (if using), and a pinch of salt to prepare the glaze.
  5. Add vegetables to the pan. Remove the sheet pan from the oven. Push the potatoes to one-third of the pan. Add the green beans and cherry tomatoes to the middle third, drizzle with remaining olive oil, season with the remaining salt and pepper, and toss to coat evenly.
  6. Arrange the salmon and glaze. Place the salmon fillets on the final third of the sheet pan. Brush the salmon generously with the maple glaze, reserving some glaze for later.
