Ingredients

Scale

Chicken and Marinade

  • 4 chicken breasts, cubed
  • 1/3 cup olive oil
  • 1 tbsp country Dijon mustard
  • 2 tbsp honey
  • 1 1/2 tsp paprika
  • 2 cloves garlic, minced
  • Salt and pepper, to taste

Vegetables

  • 1 zucchini, cubed
  • 2 cups tomatoes, halved

Instructions

  1. Prepare the Marinade: In a small bowl, whisk together olive oil, honey, Dijon mustard, paprika, minced garlic, salt, and pepper until fully combined to create a smooth marinade.
  2. Marinate the Chicken: Pour the marinade over the cubed chicken breasts and toss to coat evenly. Cover and refrigerate for at least 1 hour, or up to overnight, to allow the flavors to fully infuse.
  3. Prepare the Vegetables: Place the cubed zucchini and halved tomatoes on a sheet pan. You can choose to mix the veggies together or arrange them separately, depending on your preference.
  4. Add the Chicken to the Pan: Arrange the marinated chicken pieces separately from the vegetables on the sheet pan to ensure even cooking and prevent mixing during baking.
  5. Season the Vegetables: Drizzle a little olive oil over the zucchini and tomatoes, and sprinkle with salt and pepper to taste for extra flavor and roasting crispness.
  6. Bake: Preheat the oven to 400°F (200°C). Bake the chicken and vegetables on the sheet pan for 25 minutes, or until the chicken is cooked through and the vegetables are tender.

Notes

  • Marinate the chicken overnight for richer flavor.
  • You can substitute zucchini with bell peppers or asparagus.
  • Serve with rice, quinoa, or crusty bread for a complete meal.
  • Ensure chicken reaches an internal temperature of 165°F (74°C) before serving.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
