  • 8 oz Cream Cheese, softened

  • 2 tablespoons Butter
  • 2 cups Powdered Sugar
  • 23 tablespoons Milk (2 tbsp for piping glaze, 3 tbsp for dunking)
  • 1/2 teaspoon Vanilla Extract

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to ensure it’s hot and ready when your dough is prepared.
  2. Prepare Dough: Soften the cream cheese and butter to room temperature. In a large bowl, combine the lemon cake mix, softened cream cheese, softened butter, egg, and vanilla extract. Mix thoroughly until all ingredients are fully incorporated and the dough is thick and sticky.
  3. Form Cookies: Using a medium-sized cookie scoop (about 1.5 tablespoons), scoop out portions of dough and roll each into a ball. Roll each dough ball in powdered sugar until well coated, then place them on a lightly greased baking sheet, spacing them evenly to allow for slight spreading.
  4. Bake: Bake in the preheated oven for 9 to 10 minutes, or until the cookies are just puffed up and crackled on top but still soft to the touch. Remove from oven and allow to cool completely on the baking sheet before glazing.
  5. Make Glaze: In a small saucepan, melt 2 tablespoons of butter over low heat. Once melted, remove from heat and whisk in powdered sugar, vanilla extract, and 2 tablespoons of milk if you plan to pipe the glaze, or 3 tablespoons if you want to dunk the cookies for a thicker coating.
