Ingredients

Scale

Meat and Seasonings

  • 1 pound lean ground beef
  • 1/2 teaspoon garlic powder
  • Kosher salt and freshly ground black pepper to taste
  • 1/3 cup thinly sliced green onions
  • 2 tablespoons low sodium soy sauce
  • 1 teaspoon sriracha (optional)

Vegetables

  • 1 pound shredded Brussels sprouts

Other Ingredients

  • 1 tablespoon avocado oil
  • 1/2 cup sweet chili sauce
  • 1/2 of a lime, juiced
  • Sesame seeds for garnish (optional)

Instructions

  1. Cook the Ground Beef: Add the ground beef to a large skillet and crumble it while cooking over medium heat. Stir in the green onions and season with kosher salt, freshly ground black pepper, garlic powder, sriracha (if using), and low sodium soy sauce. Cook until the beef is fully browned and cooked through. Remove the beef from the skillet and set it aside on a plate.
  2. Sauté the Brussels Sprouts: Add one tablespoon of avocado oil to the same skillet. Toss in the shredded Brussels sprouts and season with kosher salt and freshly ground black pepper. Sauté them over medium heat, stirring occasionally, until they are soft and caramelized, about 6-8 minutes.
  3. Combine and Add Sauce: Return the cooked ground beef to the skillet with the caramelized Brussels sprouts. Pour in the sweet chili sauce and lime juice. Stir everything together thoroughly to ensure the beef and sprouts are evenly coated in the sauce and heated through.
  4. Garnish and Serve: Sprinkle sesame seeds on top for garnish if desired. Serve immediately over rice or alongside your preferred side dish.

Notes

  • For a spicier version, increase the amount of sriracha or add crushed red pepper flakes.
  • Use low sodium soy sauce to keep sodium levels moderate.
  • This dish pairs wonderfully with steamed jasmine rice, quinoa, or cauliflower rice for a low-carb option.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
