Greek Yogurt Brownies Recipe

4.6 from 96 reviews

These Greek Yogurt Brownies are a healthier twist on traditional brownies, using Greek yogurt and almond or oat flour for moisture and texture. Sweetened with maple syrup and rich in cocoa, they offer a deliciously fudgy treat with a boost of protein and a lower fat profile. Perfect as a guilt-free dessert or snack.

Ingredients

Scale

Wet Ingredients

  • ¾ cup plain Greek yogurt (2% or full fat)
  • 2 large eggs (or flax eggs)
  • ⅓ cup maple syrup (or sweetener of choice)
  • 1 tsp vanilla extract

Dry Ingredients

  • ½ cup unsweetened cocoa powder
  • ½ cup almond flour or oat flour
  • ¼ tsp salt

Optional Mix-ins

  • ¼ cup dark chocolate chips
  • Chopped nuts or toppings as desired

Instructions

  1. Preheat and Prepare: Preheat the oven to 175°C (350°F) and line an 8×8-inch baking pan with parchment paper to prevent sticking.
  2. Mix Wet Ingredients: In a medium bowl, whisk together the Greek yogurt, eggs, maple syrup, and vanilla extract until smooth and well combined.
  3. Combine Dry Ingredients: In a separate bowl, mix together the unsweetened cocoa powder, almond or oat flour, and salt thoroughly.
  4. Fold Ingredients: Gently fold the dry ingredients into the wet mixture just until combined to avoid overmixing. Incorporate any optional mix-ins like dark chocolate chips or nuts at this stage.
  5. Bake: Pour the batter evenly into the prepared pan and smooth the top with a spatula. Bake in the preheated oven for 20 to 25 minutes, or until a toothpick inserted in the center comes out mostly clean with a few moist crumbs.
  6. Cool and Chill: Allow the brownies to cool completely in the pan. Then, refrigerate for at least 1 hour before slicing into squares to help them set and enhance their fudgy texture.

Notes

  • For a vegan option, use flax eggs instead of regular eggs and ensure maple syrup or chosen sweetener is vegan-friendly.
  • Substitute almond flour with oat flour to make it nut-free but ensure oat flour is certified gluten-free if necessary.
  • The brownies are best served chilled for a firmer, fudgier texture.
  • Storage: Keep refrigerated in an airtight container for up to 5 days or freeze for longer storage.
  • Adjust sweetness according to preference or dietary needs by modifying the amount/type of sweetener.
