Ingredients

Scale

Vegetables

  • 1 small head cauliflower, cut into florets
  • 8 oz mushrooms, sliced
  • 4 cloves garlic, minced

Oils & Fats

  • 2 tbsp olive oil
  • 2 tbsp butter

Seasonings & Extras

  • ½ tsp smoked paprika
  • ½ tsp Italian seasoning
  • Salt & black pepper, to taste
  • 1 tbsp lemon juice
  • ¼ cup Parmesan cheese (optional)
  • Fresh parsley, for garnish

Instructions

  1. Heat the Skillet: In a large skillet over medium heat, add the olive oil and butter. Allow them to melt and heat until just beginning to sizzle, creating a flavorful base for the vegetables.
  2. Sauté the Veggies: Add the cauliflower florets to the skillet and cook for 5-6 minutes until they start to become golden and tender. Next, add the sliced mushrooms and continue cooking for an additional 4-5 minutes to soften and release their moisture.
  3. Add Garlic & Seasonings: Stir in the minced garlic, smoked paprika, Italian seasoning, salt, and black pepper. Cook everything together for about 2 minutes until the garlic is fragrant and the spices are well distributed.
  4. Finish & Serve: Drizzle the lemon juice over the cooked vegetables to add brightness. Sprinkle with Parmesan cheese if using, and garnish with fresh parsley. Serve the skillet dish hot as a flavorful side or light main course.

Notes

  • For a vegan option, omit the butter and Parmesan cheese or substitute with vegan alternatives.
  • Try adding a pinch of red chili flakes for a spicy kick.
  • Serve alongside grilled chicken or fish to make it a complete meal.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
