Ingredients

Scale

Main Ingredients

  • 68 English muffins, toasted and halved
  • 8 ounces Canadian bacon or thinly sliced ham
  • 8 large eggs
  • 2 cups whole milk
  • 1 cup hollandaise sauce (homemade or store-bought)
  • Salt, to taste
  • Freshly ground black pepper, to taste

Garnish

  • Fresh herbs (chives or parsley), chopped

Instructions

  1. Preheat and prepare the dish: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish thoroughly to prevent sticking.
  2. Layer the bread and bacon: Place half of the toasted English muffin halves evenly in the baking dish. Arrange all the Canadian bacon slices over the muffin layer.
  3. Mix and pour the egg custard: In a large bowl, whisk together the eggs, whole milk, salt, and pepper until the mixture is smooth and well combined. Pour this egg mixture evenly over the layered muffins and bacon in the dish.
  4. Add hollandaise and bake: Drizzle the hollandaise sauce evenly over the top of the casserole. Bake in the preheated oven for 30 to 40 minutes, or until the custard is set and a knife inserted in the center comes out clean.
  5. Rest and garnish: Allow the casserole to rest for 10 minutes after removing it from the oven. This helps it set further, making it easier to slice. Garnish with freshly chopped chives or parsley before serving.

Notes

  • You can use store-bought hollandaise sauce for convenience or prepare it fresh for a more vibrant flavor.
  • Vegetarian variation: Replace Canadian bacon with sautéed mushrooms or spinach.
  • The casserole can be assembled the night before and refrigerated, then baked fresh in the morning.
  • Ensure muffins are well toasted to prevent sogginess after baking.
  • Serve with a side of fresh fruit or a light salad for a balanced meal.
