Ingredients

Scale

For the Salmon Roll Ups:

  • 8 oz. smoked salmon
  • ½ cup whipped cream cheese
  • 2 Tbsp green onion, thinly sliced
  • 2 tsp lemon zest
  • 1 small Persian cucumber, sliced into thin strips
  • ½ avocado, sliced into thin strips
  • Everything But The Bagel Seasoning (EBTB), as needed

For the Citrus Soy Sauce (Optional):

  • 2 Tbsp soy sauce
  • 2 Tbsp lemon juice
  • 1 Tbsp water
  • 1½ tsp mirin
  • 1 Tbsp green onion, sliced thin

Instructions

  1. Make the citrus soy sauce: Stir the soy sauce, lemon juice, water, mirin, and thinly sliced green onion together in a small bowl. Keep it chilled in the refrigerator while you prepare the salmon rolls to allow flavors to meld.
  2. Prepare the cream cheese filling: In a small bowl, mix the whipped cream cheese with the 2 tablespoons of thinly sliced green onion and 2 teaspoons of lemon zest until combined. Set this mixture aside.
  3. Prepare the salmon base: Lay a large piece of plastic wrap on your counter. Sprinkle a good amount of Everything But The Bagel Seasoning evenly over the plastic wrap. Arrange the smoked salmon slices over this seasoning to form a small rectangle, making sure the slices overlap slightly to create an even layer.
  4. Assemble the roll: Spread the cream cheese mixture evenly over the salmon layer. In the center of the rectangle, place the thin strips of cucumber and avocado horizontally. Using the plastic wrap to assist, carefully roll the salmon over the cucumber and avocado, continuing to roll tightly until you reach the other side, forming a log shape.
  5. Chill and slice: Place the rolled salmon log into the freezer for 5 to 10 minutes to firm up, which will help when slicing. Remove from freezer and unwrap, then slice the roll into your desired thickness with a sharp knife.
  6. Serve: Arrange the sliced roll ups on a serving platter and serve with the chilled citrus soy sauce for dipping. Alternatively, make thinner slices and serve them atop your favorite crackers for a tasty appetizer.

Notes

  • Feel free to substitute mirin with a small amount of honey or sugar if unavailable.
  • Use a sharp serrated knife to slice the roll ups smoothly without squishing.
  • Everything But The Bagel Seasoning adds great flavor but can be omitted or substituted with sesame seeds, poppy seeds, and coarse salt.
  • These roll ups are best enjoyed fresh but can be covered and refrigerated for up to 24 hours.
  • For a dairy-free option, substitute cream cheese with a vegan cream cheese alternative.
