  3. Mix ingredients: To the bowl with the beaten egg, add 1 pound ground chicken, 3 chopped scallions, ¼ cup chopped fresh parsley, 3 tablespoons mayonnaise, 3 tablespoons breadcrumbs, ½ teaspoon salt, ¼ teaspoon black pepper, and 1 teaspoon garlic powder. Use your hands to combine all ingredients evenly into a cohesive mixture.
  4. Shape balls: Divide the chicken mixture into 6 equal portions. Roll each portion quickly between your palms to form smooth balls and place each one into the shallow bowl of flour.
  5. Form patties: Roll each chicken ball in the flour, coating all sides. Then gently press each floured ball to form flattened patties. Arrange the formed patties on a large plate and set aside.
