Ingredients

Scale

Bread Batter

  • 2 cups (240g) all-purpose flour, sifted
  • 1 tablespoon (12g) baking powder
  • 1/2 teaspoon (3g) salt
  • 1 teaspoon (2g) ground cinnamon
  • 2/3 cup (133g) granulated sugar
  • 1/3 cup (75g) unsalted butter, softened
  • 2 large eggs, room temperature
  • 1/2 cup (120ml) whole milk
  • 1 teaspoon (5ml) vanilla extract

Apple Filling

  • 2 medium apples, peeled, cored, and diced (about 2 cups)
  • 1/3 cup (67g) brown sugar, packed
  • 1 teaspoon (2g) ground cinnamon

Glaze

  • 1 cup (120g) powdered sugar
  • 23 tablespoons (30-45ml) milk
  • 1/2 teaspoon (2.5ml) vanilla extract

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan thoroughly, then line it with parchment paper to make removing the bread easier after baking. Peel, core, and dice the apples, then set them aside for later use.
  2. Mix Dry and Wet Ingredients: In a medium bowl, whisk together the flour, baking powder, salt, and cinnamon to combine and aerate the dry ingredients. In a larger bowl, beat the softened butter with the granulated sugar until the mixture is light and fluffy. Add the eggs one at a time, mixing well after each addition. Then stir in the milk and vanilla extract ensuring everything is well incorporated. Scrape down the sides of the bowl to make sure all ingredients are fully blended.
  3. Combine and Layer Batter: Add the dry ingredient mixture slowly into the wet ingredients, mixing just until combined to avoid overmixing. Pour half of the batter into the prepared loaf pan. Sprinkle half of the diced apples along with half the cinnamon and brown sugar mixture evenly over the batter. Pour the remaining batter on top and repeat with the rest of the apples and cinnamon-sugar topping to create layers.
  4. Bake the Bread: Place the loaf pan in the preheated oven and bake for 50-60 minutes. Check doneness by inserting a toothpick into the center of the bread; it should come out clean when the bread is fully cooked. Once baked, let the bread cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
  5. Prepare and Apply Glaze: In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth and slightly runny. Adjust milk quantity to reach your desired consistency. Drizzle the glaze generously over the cooled bread. Slice and serve your delicious Easy Amish Apple Fritter Bread.

Notes

  • For best results, use fresh, crisp apples such as Honeycrisp or Granny Smith for a nice balance of tartness and sweetness.
  • Don’t overmix the batter once the dry ingredients are added to avoid a dense bread.
  • Use parchment lining for easy removal and cleaner slicing.
  • Adjust glaze thickness by adding more or less milk depending on desired dripiness.
  • Store leftovers in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
  • This bread can also be frozen for up to 2 months; thaw at room temperature before glazing.
