Ingredients

Scale

Dumplings and Garnishes

  • 1/2 bag frozen Wontons/Potstickers (~16 wontons, Bibigo brand recommended)
  • 1 tbsp sesame oil (for frying)
  • 1/4 cup wonton strips
  • 2 tbsp diced almonds
  • 1 tsp sesame seeds
  • 1 lime wedge

Salad Base

  • 1 bag frozen, shelled edamame (8 oz)
  • 1 bag chopped broccoli slaw kit (or equivalent, approx. 12 oz)
  • 1/2 shallot, thinly sliced using a mandolin
  • 2 green onion stalks, finely diced
  • 1/2 cup fresh cilantro, diced

Dressing

  • 1/2 cup sweet chili sauce
  • 2 tbsp rice vinegar
  • 1 tbsp soy sauce
  • 1/2 tbsp sesame oil

Instructions

  1. Prepare Dumplings: Cook the frozen dumplings or wontons according to the package instructions. For best results, pan-fry them in 1 tablespoon of sesame oil for 2-3 minutes on each side until crispy and golden, or air-fry them until crisp. This adds a delightful crunch and enhances their flavor.
  2. Cook Edamame: Microwave the frozen shelled edamame according to the package directions until tender but still bright green. Drain and let cool slightly.
  3. Assemble Salad Base: In a large mixing bowl, combine the chopped broccoli slaw kit, cooked edamame, finely diced green onions, shaved shallot, and diced cilantro. Toss gently to mix all vegetables evenly.
  4. Make Dressing: In a glass measuring cup or small bowl, whisk together the sweet chili sauce, rice vinegar, soy sauce, and sesame oil. If the dressing is too thick to your preference, add one tablespoon of water or vegetable broth to thin it slightly.
  5. Combine Salad and Dressing: Pour the dressing over the prepared salad base and toss well to coat everything evenly. If you plan to serve later, keep the cooked dumplings separate until serving to maintain their crispiness.
  6. Plate and Garnish: Arrange the tossed salad on serving plates or a large bowl. Top with the crispy cooked dumplings. Garnish with wonton strips, diced almonds, sesame seeds, and a squeeze of fresh lime juice for brightness. Serve immediately and enjoy!

Notes

  • The sesame oil used for frying dumplings adds a nutty flavor; substitute with vegetable oil if sesame oil is unavailable.
  • If you prefer a gluten-free version, use gluten-free soy sauce and ensure wontons are gluten-free or substitute with gluten-free dumplings.
  • To keep dumplings crispy when preparing ahead, store fried dumplings and salad separately and combine just before serving.
  • Adding a tablespoon of water or broth to the dressing can help balance the thickness for easier mixing.
