Ingredients

Scale

Dumplings and Noodles

  • 810 frozen dumplings
  • 1 package instant ramen noodles (about 85g)

Broth and Seasoning

  • 4 cups chicken broth
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil

Eggs and Vegetables

  • 2 large eggs
  • 2 cups fresh spinach leaves
  • 2 green onions, thinly sliced

Garnishes

  • 1 teaspoon black sesame seeds

Instructions

  1. Prepare soft-boiled eggs: Bring a pot of water to a rolling boil. Carefully lower the eggs into the water using a spoon. Boil for 6-7 minutes to achieve a soft but set yolk. Immediately transfer the eggs to an ice water bath to cool, making them easier to peel. Once cooled, peel the eggs and slice them in half lengthwise.
  2. Heat and season broth: In a large pot, bring the chicken broth to a gentle simmer over medium heat. Stir in the soy sauce and sesame oil to infuse the broth with a rich, savory flavor base.
  3. Cook dumplings in broth: Add the frozen dumplings directly into the hot simmering broth. Cook for 8-10 minutes, until they float to the surface and are heated through thoroughly.
  4. Add ramen noodles: Place the instant ramen noodles into the pot with the simmering broth and dumplings. Cook for 2-3 minutes, or until the noodles are tender but not mushy. Stir gently to prevent the noodles from clumping.
  5. Wilt fresh spinach: Add the fresh spinach leaves to the pot and let them wilt gently in the hot broth for 1-2 minutes until vibrant green and tender.
  6. Assemble and serve: Divide the noodles, dumplings, and spinach evenly among serving bowls. Ladle the hot broth over the contents. Top each bowl with the halved soft-boiled eggs, sliced green onions, and a sprinkle of black sesame seeds for a visually appealing and tasty finish.

Notes

  • Use low-sodium soy sauce to control saltiness if preferred.
  • You can substitute chicken broth with vegetable broth to make it vegetarian-friendly, though dumplings may need to be checked for meat fillings.
  • Adjust cooking time of dumplings based on package instructions if different from the recommended 8-10 minutes.
  • For extra flavor, add a small knob of grated ginger or minced garlic to the broth while simmering.
  • Soft-boiled eggs can be made ahead and stored in the fridge for up to 2 days.
