For the S’mores
- 8 graham cracker sheets
- 8 large marshmallows
- 4 Hershey’s chocolate bars
For the Batter
- 1 1/2 cups pancake mix
- 1 large egg
- 1 cup milk
- 2 teaspoons vegetable oil
- Oil for frying (about 3 inches deep)
- Heat oil and make batter: Heat 3 inches of oil in a deep pot to 375°F (190°C). In a bowl, whisk together pancake mix, egg, milk, and 2 teaspoons of vegetable oil until most lumps are gone. Let the batter rest for 5 minutes to thicken slightly.
- Assemble the s’mores: Break the graham cracker sheets in half. On one half, place a large marshmallow, then add half a Hershey’s chocolate bar on top. Finish by placing another graham cracker half over the filling to create a sandwich. Repeat until all s’mores are assembled.
- Coat with batter: Using tongs, dip each assembled s’more into the pancake batter, ensuring it is completely coated. Gently shake off any excess batter to avoid drips.
- Fry until golden: Carefully lower the coated s’mores into the hot oil using tongs. Hold them initially so they don’t fall apart. Fry for 3 to 4 minutes or until the batter is golden brown and crisp all over.
- Drain and cool: Remove the fried s’mores with a slotted spoon and place them on a plate lined with paper towels to absorb excess oil. Let them cool for 5 to 10 minutes before serving to prevent burns from the hot filling.
Notes
- Ensure the oil temperature stays consistent at 375°F for best frying results.
- Use fresh vegetable oil to avoid off-flavors.
- You can substitute Hershey’s chocolate bars with your favorite chocolate if desired.
- Handle the fried s’mores carefully to prevent the filling from leaking.
- Serve warm for the best gooey texture.
