Bread and Spreads

  • 2 loaves Italian, French or Cuban bread, about 12 inches long each
  • 1 ounce unsalted butter
  • 1 ounce yellow mustard

Fillings

  • 6 ounces Swiss cheese (8 slices)
  • 12 ounces sweet (honey) deli ham (8 thin slices)
  • 8 dill pickle slices
  • 12 ounces roast pork or pork tenderloin, sliced

Instructions

  1. Prepare the Bread: Trim off the ends and remove the top and bottom crust from each loaf. Cut each loaf into halves, resulting in four 6-inch pieces of bread. Slice each piece lengthwise in half to create 8 slices. Lightly butter the top and bottom surfaces of each slice that will be grilled.
  2. Assemble the Sandwiches: Place the bread slices butter-side down on a large baking pan. Generously spread yellow mustard on the inside of all 8 slices. On 4 of the halves, place one slice of Swiss cheese over the mustard. Layer the pickle slices, deli ham, and roast pork evenly over the cheese. Top these with an additional slice of Swiss cheese, then place the remaining 4 slices of bread on top with the buttered side facing up.
  3. Grill the Sandwiches: Preheat a non-stick skillet over medium heat. Place two sandwiches in the skillet and reduce the heat slightly. Grill until the bottom is lightly browned, about 3-4 minutes. Carefully flip the sandwiches and press them down firmly using a heavy cast iron skillet or foil-wrapped bricks to mimic a sandwich press. Continue cooking until the cheese melts and both sides are golden brown, about another 3-4 minutes per side. Repeat with the remaining sandwiches.
  4. Serve: Remove the sandwiches from heat, cut them diagonally in half, and serve immediately. Optionally, accompany with chips and a cold beer for a true Cuban dining experience.

Notes

  • Using Cuban bread is traditional and gives the sandwich its authentic texture, but Italian or French bread are acceptable substitutes.
  • Pressing the sandwich ensures even grilling and melting of the cheese; if you don’t have a panini press or heavy skillet, wrap bricks in foil as a weight.
  • Adjust the amount of mustard to taste, as it adds a tangy contrast to the rich meats and cheese.
