  • Salt and pepper, to taste

Topping

  • 8 oz shredded Colby Jack cheese

Instructions

  1. Brown the Ground Beef and Aromatics: Heat a large skillet over medium-high heat and cook the ground beef with the diced onion and minced garlic until the beef is thoroughly browned and the onions are softened. Drain any excess fat, then transfer this mixture into the slow cooker.
  2. Add Remaining Ingredients: Into the slow cooker with the beef mixture, add the cubed gold potatoes, drained kidney beans, diced tomatoes with green chilies, cream of mushroom soup, beef broth, chili powder, oregano, parsley, salt, and pepper. Stir gently to combine all ingredients evenly.
  3. Slow Cook: Cover the slow cooker and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours. The casserole is done when the potatoes are tender and all flavors have melded together beautifully.
  4. Add Cheese Topping: Approximately 10 minutes before serving, stir the casserole gently, then sprinkle the shredded Colby Jack cheese evenly over the top. Cover again and allow the cheese to melt thoroughly before serving.
