Ingredients

Scale

Chicken and Seasoning

  • 12 Tablespoons vegetable oil
  • Salt and pepper, to taste
  • 1.5 pounds boneless, skinless chicken breasts (about 2 large chicken breasts)

Sauce Mixture

  • 4 ounces (½ block) cream cheese, softened to room temperature
  • 3 Tablespoons unsalted butter, softened to room temperature
  • 10.5 ounce can cream of chicken soup (recommend low or no sodium if sensitive to salt)
  • 3 cloves garlic, minced
  • ¾ cup chicken broth (recommend low or no sodium if sensitive to salt)
  • 1 (0.7 ounce) packet Good Seasons Dry Italian Salad Dressing Mix (or your favorite mix)

Pasta and Garnish

  • 16 ounce box angel hair pasta
  • Chopped fresh parsley, cracked pepper and/or grated Parmesan cheese (optional for serving)

Instructions

  1. Prep and Season Chicken: Heat a cast iron skillet over medium-high heat. Add 1-2 tablespoons of vegetable oil and swirl to coat the pan. Season both sides of the chicken breasts with salt and pepper to taste.
  2. Sear Chicken: Once the pan is hot, add the chicken breasts and sear each side for 2-3 minutes until golden brown. Remove from heat and set aside.
  3. Prepare Cream Sauce: In a medium bowl, whisk together the softened cream cheese and unsalted butter until smooth and creamy.
  4. Add Remaining Sauce Ingredients: Stir in the cream of chicken soup, minced garlic, chicken broth, and Italian dressing mix until well combined.
  5. Arrange Chicken in Crock Pot: Spray the inside of a crock pot with non-stick cooking spray. Place the seared chicken breasts in the bottom of the crock pot.
  6. Pour Sauce and Cook: Pour the cream sauce mixture evenly over the chicken breasts. Cover and cook on low for 3-4 hours, or until the chicken reaches an internal temperature of 165°F (74°C). For more tender, falling-apart chicken, cook longer if desired.
  7. Cook Pasta: Shortly before serving, cook the angel hair pasta according to package instructions until al dente. Drain well.
  8. Serve: Serve the chicken either whole or shredded. You can toss the pasta with the sauce or plate the pasta and spoon the chicken and sauce on top.
  9. Optional Garnish: Top with chopped fresh parsley, cracked black pepper, and/or grated Parmesan cheese to enhance flavor and presentation.

Notes

  • Use low or no sodium versions of cream of chicken soup and chicken broth if you need to control salt intake.
  • Always check the internal temperature of chicken to ensure it is fully cooked, especially when using a crock pot, as cooking times and temperatures may vary.
  • For a creamier texture, shred the chicken into the sauce and mix with the pasta.
  • This recipe can be doubled for larger gatherings, but ensure your crock pot is large enough to accommodate the ingredients.
  • Adding a splash of white wine or lemon juice can brighten the flavor of the sauce if desired.
