Ingredients

Scale

Chicken and Seasoning

  • 2 lbs chicken, cut into thin strips
  • 1 tsp sea salt
  • 1 tsp ground pepper

Sauté Base

  • 2 tbsp butter
  • 1 white onion, diced
  • 2 tbsp garlic, diced

Sauce

  • ½ cup chicken stock
  • ½ cup roasted red pepper, drained and sliced
  • 1 cup heavy cream
  • ½ cup parmesan cheese, shredded
  • 1 tbsp Italian seasoning
  • ½ cup pepperoncini peppers, drained (sliced, ring, or whole)

Instructions

  1. Prep the Chicken: Start by cutting the chicken into thin strips. Season it evenly with sea salt and ground pepper to enhance the natural chicken flavors.
  2. Brown the Chicken: In a large, heavy skillet, melt the butter over medium-high heat. Add the seasoned chicken strips and cook for about 8 minutes, browning on all sides. The chicken doesn’t need to be fully cooked at this point. Remove the chicken from the pan and set aside.
  3. Sauté Garlic and Onions: Using the same skillet, add the diced onions and garlic. Cook for about 5 minutes until browned and fragrant, which builds the flavorful base of the sauce.
  4. Create the Sauce: Pour in the chicken stock and roasted red peppers. Let the mixture simmer and reduce by half over approximately 5 minutes to concentrate the flavors.
  5. Add the Cream and Cheese: Turn off the heat, then slowly stir in the heavy cream and shredded Parmesan cheese. Whisk vigorously to achieve a smooth, creamy sauce. Return the heat to medium-high.
  6. Finish with Italian Seasoning and Pepperoncinis: Stir in Italian seasoning and pepperoncini peppers. Return the browned chicken strips to the skillet and simmer until the chicken is cooked through, reaching an internal temperature of 165°F. If the sauce thickens beyond your liking, add additional chicken stock to reach desired consistency.
  7. Serve and Enjoy: Once the chicken is fully cooked and the sauce is creamy and reduced, remove from heat. Serve over rice, pasta, or vegetables for a delicious, comforting meal.

Notes

  • For a dairy-free version, substitute heavy cream with coconut cream.
  • To make it vegetarian, replace the chicken stock with vegetable broth and use plant-based chicken alternatives.
  • Adjust the heat level by choosing mild or hot pepperoncini peppers according to your taste.
  • Ensure the chicken reaches an internal temperature of 165°F for safe consumption.
  • This dish pairs well with rice, pasta, or steamed vegetables to soak up the creamy sauce.
