Ingredients

Scale

Chicken

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • Salt & pepper to taste
  • 2 tbsp olive oil

Pasta & Cheese

  • 1 cup orzo pasta
  • 8 oz Boursin cheese (garlic & herb)
  • 2 cups low-sodium chicken broth

Vegetables & Herbs

  • 2 cups fresh spinach
  • 4 garlic cloves (minced)
  • 1 tsp dried oregano

Instructions

  1. Prepare Ingredients: Chop the fresh spinach and mince the garlic cloves to have all components ready for cooking.
  2. Cook Chicken: Heat olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper. Place them in the skillet and cook each side for 6-7 minutes until golden brown and cooked through. Remove the chicken from the pan and set aside.
  3. Sauté Garlic: In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn.
  4. Cook Orzo: Pour in the low-sodium chicken broth and bring it to a boil. Stir in the orzo pasta and cook for 8-10 minutes until the orzo is al dente and has absorbed much of the broth.
  5. Add Cheese and Spinach: Reduce the heat to low. Mix in the Boursin cheese until it melts fully into a creamy sauce. Then, stir in the fresh spinach and cook until wilted.
  6. Combine and Serve: Slice the cooked chicken breasts and fold them into the creamy orzo mixture. Serve warm for a cozy, satisfying meal.

Notes

  • For a lower-fat version, use a reduced-fat Boursin cheese or substitute with a lighter cream cheese.
  • Fresh spinach can be substituted with baby kale or Swiss chard for different flavors.
  • To enhance flavor, add a splash of white wine when boiling the broth and orzo.
  • Ensure not to overcook the orzo to keep a pleasant al dente texture.
  • This dish pairs well with a light side salad or steamed vegetables.
